  • 2 cloves Garlic Use garlic powder if fresh ingredients are unavailable.
  • 1 each Shallot Use onion powder if fresh ingredients are unavailable.
  • 1/4 cup Nutritional Yeast Omit if not available; dressing will still be tasty.

Instructions

Preparation

  • Finely chop the green cabbage, cucumbers, chives, and green onions. Use a sharp knife to achieve clean cuts, creating a beautiful base for your salad.
  • In a blender or food processor, blend the lemon juice, olive oil, rice vinegar, basil, spinach, garlic, shallot, nutritional yeast, sea salt, and optional nuts/seeds until the mixture is smooth and creamy.
  • Pour the creamy dressing over the chopped veggies and gently toss everything together. Ensure that each piece is evenly coated for maximum flavor.
  • Allow the salad to sit in the fridge for about 30 minutes. This lets the flavors meld beautifully, though it can be enjoyed right away!

Notes

Serve with tortilla chips for a delightful crunch and adjust ingredients to suit your taste. Fresh ingredients enhance flavor and nutrition.
